My Favorite Cranberry Orange Cookies – Gluten-free

My favorite Joy the Baker cookbook was given to me for my birthday during high school. Her Cranberry Orange Poppyseed cookie recipe was one of my favorites! But, now that I'm trying to eat more gluten-free since I've become sensitive to gluten, trying to remake her recipe in a gluten-free version has been on my radar. Here is my take on her cookie recipe but for those that are gluten-free and still want to snack on a delicious cookie filled with cranberries and the scent of oranges!

Waffles for breakfast? Waffles for dinner? These banana rice waffles mixed in a blender can't make it any easier to make waffles any time of the day! And these gluten-free waffles are full of flavor from the banana, rice, and cinnamon. And as summer is coming up fast, big breakfast meals are going to be back fast as everyone will be off from school. And for those that miss out on waffle breakfast, waffle dinner is definitely something my family likes to do every so often. Next time you and your family are planning breakfast, think about these banana rice waffles! Super delicious and fluffy!!

Our favorite Carrot Cake!

Happy Mother's Day to all the Mothers out there! This weekend we celebrated all the Mothers in our family and some birthdays with this wonderfully moist and delicious carrot cake topped with freshly toasted coconut! Such an easy cake recipe and with cream cheese frosting plus toasted coconut you can't go wrong. So happy we could share our favorite cake recipe with all our relatives!!
