It is finally Autumn! Even though the weather outside may still in on the sunny side, inside the house we have started to change our decor to fit the Autumn season. As someone who loves pumpkin flavored anything and all things cozy, when Summer comes to a close, I’m just counting down the days when Trader Joes’ starts stocking their Autumn flavors.
I have been a HUGE fan of their Pumpkin spice coffee for years, this coffee got me through the cold months during college, all the way through the New Year celebrations. Going into Trader Joes’ this year, I picked up some more pumpkin items: Pumpkin spice Almond beverage, pumpkin butter, and this box of gluten-free pumpkin bread and muffin baking mix.
I used to use this baking mix all the time in college when I needed a break from banana bread, but still needed something for breakfast or snack. But now that I’m back home, I decided to try and elevate this already delicious pumpkin bread.
This baking mix is great to have on hand when you need to make a quick bread for church or a friend’s house or just want something to bring the Autumn smell into your house.
Easy Pumpkin Walnut Pecan Bread
makes: 1 loaf
1 box Trader Joes’ Pumpkin Bread & Muffin Baking Mix
1 Cup water
1/2 Cup butter, melted
1/2 Cup walnuts, chopped (1/4 for bread, 1/4 for crumble topping)
1/4 Cup pecans, chopped
4 Tbsp butter, melted
2 Tbsp gluten-free flour
1/4 Cup brown sugar
1/4 cup walnuts, chopped
- Pre-heat your oven to 350F
- In a bowl, combine the Pumpkin baking mix, chopped walnuts, and pecans
- Add in the water, butter, and eggs
- Pour into a greased loaf pan
- In another bowl, combine all the crumble topping ingredients and sprinkle on top
- Bake at 350F for 55-60 minutes, or until a toothpick comes out cleanly
- Cool in the loaf pan for 15-20 minutes before transferring to a cooling rack to cool completely
- Slice and enjoy!
While this was in the oven, our house slowly started to smell of pumpkin, cinnamon and all kinds of spices! Making the house warm and cozy!
This pumpkin bread, with walnuts and pecans in every bite, is truly delicious! And with the crunchy crumble topping, it turns this yummy pumpkin baking mix into something special!
